bubble & squeak
Here’s a great way to use up any cooked veggies lurking at the back of your fridge
You'll need
- Frying pan
- Baking tray
- Large spoon or spatula
- Large mixing bowl
Ingredients
- 1 red onion, finely chopped
- 1 tbsp cooking oil
- 450g leftover mashed potato
- 300g leftover cooked vegetables (anything will work – parsnips, green beans, sprouts, cabbage, carrots, cauliflower, broccoli or peas – just chop it up first!)
- 25g grated cheese
- 25g butter
- Plain flour
- Black pepper or paprika for an extra kick
Step one
Ask an adult to help!
Turn the oven on at 190ºC. Next, heat the oil in a frying pan. Cook the onion in the pan for four or five minutes until it’s soft. Carefully tip the cooked onion into a large bowl.
Step two
Add the mashed potato, chopped vegetables and cheese to the bowl, plus a sprinkle of pepper or paprika if you like. Mix well and divide into six portions.
Step three
Shape each portion into a round cake. Put a little flour on a plate and coat each vegetable cake in flour on both sides.
Step four
Place each cake on a greased baking tray and brush with melted butter. Bake in the preheated oven for 25 minutes. When they’re ready, serve them with a crunchy salad. Yum!
